Other programs I feel are essential and I install from the get go are:

firefox
Google Chrome and Chromium
konqueror
ktorrent
lynx
links
curl
john the ripper
virtualbox
gftp
teamviewer
k3b

bleachbit
quanta plus
nmap
rkhunter
chkrootkit
foremost
photorec (testdisk)
armagetronad (really fun game)

I also include sysstat. Nice to have the performance metrics should things start having problems.

I also install rkhunter. I don't run it in a cron but like to have it create an initial log of the server status in case a security issue comes up.
